Ingredients Serves 6
- Potato……………………………3 medium chopped into cubes (Roughly 3 cups)
- Onion…………………………….1/2 small thinly sliced
- Green Chilly…………………..5 Slit
- Ginger chopped……………...1 Tablespoons
- Curry leaves…………………..2 sprigs
- Oil………………………………...1/2 Teaspoon
- Mustard seeds…………….....1/2 Teaspoon
- Coriander Powder……….....2 Tablespoons
- Red Chilly Powder………....1/4 Teaspoon
- Turmeric Powder…………..1/4 Teaspoon
- Garam Masala Powder......1 Teaspoon
- Tomato………………………...1/2 small sliced
- Thick Coconut Milk………..1/2 Cup
- Heat oil in a pan and splutter the mustard seeds.
- Add the Potato, Onion, Green Chilly, Ginger and Curry leaves and saute for 3- 4 minutes on medium high heat.
- Reduce the flame to low and add Turmeric, Red chilly, Coriander and Garam Masala powder and saute for 2 minutes.
- Add 2 1/2 cups of water close the pan and let it cook on a medium high flame.
- When it is cooked, add the tomato slices and the coconut milk and allow it to boil along the sides.
- Serve hot with Chappathi, Appam or Idiyappam.
